Black Sapotes can be a challenge to find, they are a semi tropical Fruit that grow well in warm climates.

They’re in the Persimmon family and you can find them in tropical and semi tropical parts of the world, including Mexico, Florida, Hawaii and Southern California.

One of my all time favorite Salads (and I’ve eaten one almost EVERY SINGLE night for the past 15 years) was simple baby Greens or Spring Mix topped with a Fresh Persimmon Salsa I made from Persimmons I had picked at the Farm. It was SO yummy!

It’s been awhile since I made it, but I think it was just tomatoes, onions, garlic, lime juice, sea salt, cilantro and persimmons 🙂

This is my new favorite dressing!

If you can’t get fresh Passionfruit, there’s a few brands, like Goya, that make a good frozen seedless puree which will work.

You can often find this product in the frozen section of Latino markets, along with other fabulous exotic tropical frozen fruit!

I LOVE this dressing on a salad of Romaine lettuce & Butter leaf lettuce with some fresh cut up Guava & Starfruit when it’s in season.

I don’t like it with bitter greens like Arugula or even Kale! It’s just too tart. It needs sweet, mild & tender Greens!

What’s the SECRET ingredient in this yummy creamy dressing? Long Yellow Summer Squash! But don’t tell anyone 🙂

Squash is wonderful way to add thickness to dips, sauces and spreads.

You’ll add fiber and nutrition and cut down on fat. But not flavor!

Did you know that Summer Squash isn’t really even a Vegetable??

It’s actually a hard walled Berry, like a cucumber or watermelon, and otherwise known as “Pepos”

This dressing also makes FABULOUS Kale Chips!
