One of my all time favorite Salads (and I’ve eaten one almost EVERY SINGLE night for the past 15 years) was simple baby Greens or Spring Mix topped with a Fresh Persimmon Salsa I made from Persimmons I had picked at the Farm. It was SO yummy!

It’s been awhile since I made it, but I think it was just tomatoes, onions, garlic, lime juice, sea salt, cilantro and persimmons 🙂

Raw “Croutons” (like crumbled up flax crackers)

This is a gorgeous & elegant deep red maroon fruit salad that is perfect for a party! The cherries are a lovely addition 🙂 rich sweet flavors and packed with antioxidants!

Plus you get to enjoy cherries without the pits. They taste divine with the Plums, Pluots and Blueberries! Blackberries would also be delicious and beautiful in this Fruit Salad.

Ingredients
  1. 1-2 Cups fresh sliced pitted Bing (Red or Black) Cherries
  2. 1 Cup fresh Blueberries
  3. 1 Cup fresh diced pitted Red Plums
  4. 1 Cup fresh diced pitted Purple Plums
  5. 1 Cup fresh diced pitted Red Pluots
Instructions
  1. Slice & pit cherries. Dice & pit plums & pluots. Gently mix all ingredients together in large bowl so flavors mix. Chill if desire. Serve soon.

  1. 1-2 Beets
  2. 1-2 Carrots
  3. 1-2 ripe Tomatoes
  4. 1-2 Red, Orange OR Yellow Bell Peppers
  5. 1 small Onion (optional)
  6. 1 Cup raw Kale
  7. 1 Cup raw Spinach
  8. 1/2 raw Swiss Chard
  9. Sprinkle of Sea Salt
  10. Juice of 2 Limes
Instructions
  1. Pulse all ingredients together in food processor until small bits.
  2. Toss in bowls & serve with your favorite dressing.
Notes
  1. This is a TERRIFIC way to get your family to eat more greens! Feel free to substitute any of the veggies or add others.

Ingredients
  1. 1-2 Beets
  2. 2 Carrots
  3. 3-4 medium/large ripe Tomatoes
  4. 1 Clove Garlic, diced
  5. 1 small Onion
  6. 1 Red Bell Pepper
  7. 1 Orange or Yellow Bell Pepper
  8. 2 Tsp Fresh Turmeric, diced
  9. Squirt of honey or agave (optional)
  10. Juice of 2 Limes
  11. Sea Salt to taste
Instructions
  1. Pulse (stop & start - don't blend) all ingredients together in food processor to small bits.
  2. You may want to keep the tomatoes out until the last few pulses so they don't get too mushy.
Notes
  1. This bright beautiful salsa is so yummy with chips, as a veggie dip paired with guac or other creamy spread, or excellent in a salad!
