This is a sweet tangy fruit Jam with a citrus pop from the Kumquats.

You’ll want to choose sweet Apricots or it may be too tart! It’s like a marmalade, and will be terrific on bread or toast.

Especially served with tea!

And if you have left overs it makes fantastic dried Fruit Leather in the dehydrator!

Ingredients
  1. 6-8 soft Medjool Dates
  2. 5 Kumquats
  3. 8-10 sweet ripe Apricots, pitted
  4. 1 TB Honey or natural sweetener (optional)
Instructions
  1. Blend all ingredients in food processor until smooth.
  2. Add more dates or sweetener if necessary
  3. Store in a jar in fridge

Sapote Fruit Salad

This is a delicious end of summer Fruit Salad with creamy White Sapotes, Figs, Peaches and Pears. White Sapotes are such a treat! Kind of like vanilla custard, sweet, rich and decadent 🙂

We pick them on the Farm and the trees produce pounds and pounds of them! You can look for them at your local Farmer’s Market in the late summer.

Ingredients
  1. 4 Pears
  2. 4 White Sapotes
  3. 4 Peaches
  4. 8 Figs
Instructions
  1. Make sure all fruit is ripe and slightly soft. Core and dice, cut stems off figs. Be careful because the white Sapotes can have lots of little pits hiding. Mix gently in bowl. Serve and enjoy!
Notes
  1. This is a wonderful Fruit Salad for the last warm days of Summer or the early days of Fall when Pears are everywhere! White Sapotes are such a treat and terrific when combined with other stone fruit, figs and berries.

  1. 1-2 Cups fresh sliced pitted Bing (Red or Black) Cherries
  2. 1 Cup fresh Blueberries
  3. 1 Cup fresh diced pitted Red Plums
  4. 1 Cup fresh diced pitted Purple Plums
  5. 1 Cup fresh diced pitted Red Pluots
Instructions
  1. Slice & pit cherries. Dice & pit plums & pluots. Gently mix all ingredients together in large bowl so flavors mix. Chill if desire. Serve soon.

  3. 4 Yellow Nectarines

Ingredients
  1. about 2 cups of sweet, soft, ripe Persimmons, de-seeded & peeled
  2. 1-2 TB pea protein powder (or your favorite)
  3. 32 oz of Coconut Water
  4. generous sprinkle Cinnamon
  5. 1 TB Maca powder
  6. 1 tsp Vanilla extract
Instructions
  1. Scoop out ripe Persimmons
  2. Put in blender
  3. Add protein powder, maca, cinnamon & vanilla
  4. pour in Coconut Water
  5. Blend until smooth
  6. Pour & serve

  1. If you use really sweet ripe persimmons, this shake is heavenly!! Especially with the cinnamon. You can use coconut milk or almond milk if you want it creamier. And feel free to add ice if you like an icy smoothie.

  2. 32 oz Coconut Water (or 2/3 blender)
Instructions
  1. Cut up Pineapple
  2. put into blender
  3. pour in Coconut water
  4. Blend until smooth
  5. Strain through strainer into a big bowl
  6. Pour & serve
